Hello and Happy New Year! I hope you all had a nice weekend, ringing in 2016. My NYE was low key but fun: some of BC’s college friends were in town, we went out for tacos, then just went back to his house and hung out together. I actually managed to stay up past midnight which, believe me, is quite an accomplishment.
So! It’s a brand new year. We have a fresh set of 365 — well, 366 this year — days to set our goals and intentions. For me, this is the year I commit to creating a lifelong healthy relationship with food. I like to think I’m ahead of the curve a bit since I started a little early by reading books and I also signed up for the Rodale U course 21 Day Challenge to Take Control of Your Eating and so far it’s been very beneficial. It’s nothing, like, super mind-blowing information wise but it’s all about mindful eating. Each day there is a mantra to guide us, a small journaling exercise, a daily lesson, and a healthy snack.
I’ve tried doing the mindful eating thing on my own and never manage to follow through. I think having a daily thing like this over an extended period of time will help me be more successful. Part of building a habit is repetition, right?
Over the weekend I made one of the recipes from my new Meals on the Run cookbook, the chipotle-orange chicken thighs and ZOMG. So yummy. I paired it was a wild rice medley and some Brussels sprouts.
Like, how good does that look, amirite? The cookbook has some fantastic recipes in it and I can’t decide which one I want to try next!
